Moin-Moin(also known as MoiMoi) is a combination is beans, pepper and onions, which are washed and peeled in case of beans, grounded into a paste and made into puddings. Of course if you decide to bake the combination in an oven, you will get aslightly different result: the mixture will be a cake, not a pudding.
It is a nutrient-rich staple food in Nigeria, often used as a garnishing in parties in combination with jollof rice or fried rice. It can also be used with garri, bread or ogi(pap).
Moin-Moin usually takes the shape of the containers it is placed in, which are usually cylindrical or conical in shape. There is also the pyramid shape gotten by using banana leaves to wrap the paste.
As stated previously, Moin-Moin is nutrient rich. It is a good source of plant protein and fibre( which is good for the vegeterians in the house). The protein and fibre also have in stabilizing the blood sugar and help to give a relaxing mood.
Also beans is low in fat and has magnesium and potassium, important nutrients in lowering blood pressure. Of course such nutrients are available in Moin-Moin as well.
Basically, the process of preparing Moin-Moin involving buying of the beans( a few cups of beans will do), picking off the stones and debris from the beans, peeling and washing of the beans( the outer coat must be off), washing and addition of pepper(usually chilli pepper) and onions.
Then the pepper and onions areadded to the beans and the mixture is grinded, with enough water used to improve the grinding process.
After that, you get your containers(ranging from small empty tins of tomato paste to nylons and banana leaves. You rub vegetable oil in the case of the empty tins, otherwise you just add the oil into the moin-moin. You add seasonings and salt into the paste and mix them before pouring them into the containers.
Once that is done, you place the containers into pots with water and boil for about 45 minutes. Make sure that there is still water while boiling the paste. Once the time is done, bring down the pot, remove the pudding from the container and leave it to cool for while.
Then your Moin-Moin is ready.
